What to do with Asian grilled chicken leftovers?
I chopped them up and made quesadillas with mozzarella, and whipped up a super easy soy ginger dipping sauce.
I’m thrilled it turned out really yummy and the kids liked them.

The kids decided to “sled” down the stairs repeatedly on a slippery blanket, giggling all the while. Then they opened an umbrella behind them to see if it slowed them down.

We have a match
I really, really like that my 3 year old daughter insists on wearing mismatched socks. It started out as a fluke on mornings when she was rushed, and now she prefers it and refuses to wear matched socks. I just REALLY enjoy that spirit of creativity and non-conformity and fun.
